Executive chef Vincent Gomis comes with a wealth of michelin star experience at the Paris Park Hyatt and Le Bristol in France to ensure that a high calibre of creative Mediterranean dishes are on show at Amis restaurant.

The menu has a selection of mouth-watering starters including a lobster medallion with spices and herb mayonnaise and a grilled octopus with a chickpea and herb salad. The signature dish is an indulgent roasted chicken in a casserole with confit potatoes & lemon thyme jus (for two) and who can resist a rhum baba for dessert? They also have an excellent wine list, with a substantial ‘by the glass’ selection.

Head to St Barts only rooftop bar for a panoramic view of Grand Cul de Sac and Mont Vitet, cheekily named ‘Whisky Tango Foxtrot’ – for cocktails and a live DJ (Thursday-Sunday). No trip would be complete without sampling the Mexico to St Barth cocktail, a heavenly blend of rum, mango, agave syrup, lime, and chilli. Apart from one of the best cocktail menus in St Barts, they also have some delicious tapas for you to enjoy.
